“Burgers are the new sushi. Only two components are needed for success: high-quality meat and good buns,” says restaurateur Arkady Novikov. Unpretentious fast food, which a few years ago was strongly associated with McDonald's and Burger King, has become the mainstream of the capital's restaurant market. New burgers open on every corner. The trend was set a few years ago by food trucks (food trucks) and street food festivals, where The Burger Brothers, Burger Heroes and other similar projects debuted. Ivan just returned from Switzerland in 2012, where he studied hospitality management at the Ecole hoteliere de Lausanne. His father, Pavel Kukarskikh, entered the restaurant business in the 1990s, opening his first restaurant, Mister N, in Yekaterinburg. The project, in which Ivan also invested 2 million rubles, worked in the red. When the losses exceeded 300 thousand rubles in the third month of operation, Kukarskikh Jr. decided that it was time to change the concept and realize an old dream - to make a burger joint.


Burgers and rock and roll

The burger joint project that the entrepreneur advocated in Switzerland did little to help. “A beautiful business plan and reality are just different planets,” says Ivan. He drew knowledge about cooking meat from YouTube. Before the start, I watched hundreds of videos about how burgers work in the USA and other countries, how to fry meat correctly. The father helped with advice: he supported the son’s idea to do something of his own, and not work in the family company, and he lent money for the first institution. “In our family, 80% of conversations are still about food and catering. The cookery was turned into a burger place in two weeks: they bought a grill and an extractor hood, in total, 200 thousand rubles were spent on equipment. Meat was a problem. Then, in 2012, marbled beef, according to Ivan, was still considered an exclusive product and cost several times more than now. He agreed with farmers and dealers on the supply of chilled beef and began to fry the meat.

“At first I wanted to make such a cute European cookery in white colors - the consumer did not understand,” says Kukarskikh Jr. - Then I thought: well, get it - grill, meat, onions. We started playing rock music in the background, allowing guests to draw on the walls with felt-tip pens while waiting for their order.” It worked: already in the first week they began to sell burgers and french fries for 15-20 thousand rubles. per day, and according to the results of the first month, the turnover amounted to 600 thousand rubles. Cooking earlier in the same place brought only 450 thousand rubles.

A novice entrepreneur made a mistake that nearly cost him his business. “I bought the hood myself, and the owner of the premises installed it; we had no idea there were supposed to be filters. And once, in the second month of the burger shop, I open the door, and smoke comes out from there: it turned out that the hood was clogged, miraculously there was no fire, ”recalls the entrepreneur.

In total, about 3 million rubles were spent on the launch of the burger restaurant, the institution reached operating profit in three months, and now the “garage” on Ilyinsky Highway brings 3-4 million rubles. revenue per month, profit exceeds 500 thousand rubles. “If I didn’t make all the mistakes and didn’t start cooking first, I could meet 1 million rubles,” the restaurateur calculated.

One of the most popular burgers in Moscow at that time was Burger Brothers on Krasny Oktyabr. Ivan focused on her. “I thought they were cool, and we are sitting in the back. I even took their bun and went to my bakers, said “I want the same one,” recalls the restaurateur. What he didn't know was that The Burger Brothers had a lucky lease. “We were contacted by the owners of the Produkty cafe-bar at Krasny Oktyabr, who had a small room with a window to the street, they offered us to take it on partnership terms - for a percentage of the profits,” says Alexander Zalessky, founder of The Burger Brothers.

Kukarskikh found a room of 65 sq. m on Tsvetnoy Boulevard, whose owners agreed to provide two months of rental holidays, and began to prepare for launch. It took 4 million rubles to rent, repair and equip a new point. Ivan claims that he earned this money at the first burger.

“I thought that we worked out all the processes with our small team that worked at Ilyinka, selected the most popular menu items. The fact is that the traffic of customers in the center was much higher than on Ilyinsky Highway, the team did not have time to prepare burgers and keep clean. Customers were waiting in lines, tables were littered with rubbish. The chefs could not keep up with the pace of work and quit after a month. “We managed to exhale only in the third month, when we reached zero and formed a team. I understood: everything, we were hooked in the center. There is our sign here,” says Kukarskikh.

Today, there are already nine establishments operating under the BB & Burgers brand in Moscow and the Moscow region; the first two belong to Ivan Kukarskikh, the rest he opened with partners. “I often came to the first burger on Ilyinka and saw how everything was arranged there, even then I believed in the idea,” says Bogdan Panchenko, who wholesales vegetables to Azbuka Vkusa stores. But the site was too big, and Ivan suggested that his father open a "Paul Bakery" in the neighborhood. Kukarskikh is obsessed with the idea of ​​building a network of burgers throughout Russia and competing with McDonald's, so he decided to develop a franchise as well. In 2015, he found franchisees who opened a burger joint near the Kitai-Gorod metro station. We agreed on a royalty of 5% of the turnover, without a lump-sum fee. But six months later, the franchisees stopped paying the promised amounts, and then completely changed the sign. However, a few months later the institution closed, says Ilya Klimov, marketing director of the BB & Burgers chain. “The burger market within the Garden Ring is clearly overheated, it is now worth opening in good sleeping areas,” says Alexander Zalessky.

For example, former marketer and event manager Igor Nikulin did this when he opened a Bear Burgers burger shop a month and a half ago near the Preobrazhenskaya Ploshchad metro station, in the building of the cinema named after.
